Amanda Writes : Blueberry Muffins

After a wonderful morning playing in the snow, Maddilyn was looking in our pantry for a “snack” and while she couldn’t find whatever strange concoction she was trying to describe to me, she did say that she wanted to make Blueberry Muffins.

Now usually, we have a box of mix that we just whip together and pop in the oven. But we didn’t have any and with the roads icy it didn’t seem worth it to go to the store. So I popped onto Pinterest to find a recipe (because we had just gotten some frozen blueberries at Costco) so that we could attempt to make them without having to leave the house.

I clicked on the first pin that popped up and it was Eating on a Dime‘s Blueberry Muffin Recipe. It stated that it could be made in one bowl and we happened to have all the necessary ingredients. I was thrilled and Maddilyn was super excited.

Maddilyn has always been a great helper in the kitchen. From whipping up waffles and pancakes, to stirring noodles and checking on items in the oven, to even washing dishes…she is a natural in the kitchen. So whenever possible my husband and I try to include her and Amelia in the cooking.

I have to say, of the whole process these girls just couldn’t get enough of the blueberries. Their faces and hands were stained purple through a few washings and while they didn’t actually end up eating the coveted muffins, I thought they were delicious.

Amanda Writes : Pumpkin Cupcakes

So I am in no way a food blogger and didn’t have any plans of making this into a blog post when I made these delicious Pumpkin Cupcakes but there was some interest on Instagram so I figured I’d share!

PUMPKIN CUPCAKES WITH CINNAMON CREAM CHEESE FROSTING

I got the recipe from Lil Luna and while I would have normally followed the recipe to a T, I waited till the last minute to put this together and therefor went with pre-made frosting and added the cinnamon to it. (I used about 1 1/2 cans of pre-made frosting with about 1 1/2 teaspoons on cinnamon added).

These cupcakes came out absolutely delicious and moist. They were a quick recipe and would make a great last minute Thanksgiving dessert!
